Terri Lynn Recipes Pumpkin Spice Pecan Cake

Ingredients
- 1 Egg
- 2 tsp Vanilla extract
- 1 cup Canned pumpkin
- 1 tbsp Vegetable oil
- 1 tbsp Pumpkin pie spice
- Dash salt
- 2 tsp Baking powder
- ¾ cup Sugar
- 1 ½ cups Flour
- ½ cup Terri Lynn Pumpkin Pecans, chopped
- 2 cups Whipped topping
- 1 cup Confectioners sugar
- ½ cup Additional Terri Lynn Pumpkin Spice Pecans (for decorating top)
Directions
- Mix egg, vanilla, canned pumpkin, oil, pumpkin pie spice, salt & baking powder.
- Mix in sugar.
- Mix in flour.
- Fold in chopped pecans.
- Spread in greased 8x8” pan.
- Bake at 350 degrees for about 15 minutes.
- Let cool completely.
- Mix whipped topping with confectioners sugar and spread over cooled cake.
- Top with whole Terri Lynn Pumpkin Spice Pecans.
